SMEs working with Microsoft have resolved the situation, all apps should be visible in the M365 interface. Please report any further issues to office365@uh.edu.

Description:
When logged in to M365, many of the previously displayed apps (including, but not limited to SharePoint, OneDrive, and Lists) are not displayed in the waffle menu at the top left or in the “All Apps” interface. The applications are still accessible and no data has been lost, but navigation elements to them have been removed. SMEs have engaged with MS to restore previous functionality, though there is no estimated time for resolution at present.
Workarounds:
Files, sites, and other data stored in SharePoint and OneDrive can still be accessed through the “My Content” link in the left navigation when logged in to M365. Many of your frequently accessed sites, as well as your OneDrive, can be displayed by clicking that link, then the “Cloud Files” setting. In addition, the Search box at the top of the M365 interface continues to allow you to search for specific content by the name of the site, file, or even content within Word, Excel, PowerPoint, and PDF files.
